Roasted Cauliflower w/ Whipped Goat Cheese
Cauliflower:
- 1 head of cauliflower, trimmed of all leaves
- 8C Water
- 2.5 cups of any dry white wine
- 1/3 cup of olive oil
- 1/4 cup kosher salt
- 3 Tbsp fresh lemon juice (1 lemon)
- 2 Tbsp unsalted butter
- 1 Tbsp crushed red pepper flakes
- 1 Tbsp sugar
- 2 Bay leaves
-Preheat oven to 475.
-Combine all ingredients except the cauliflower, and bring to a boil in a large pot.
-Carefully lower cauliflower into the pot. Reduce heat to a simmer. Turn occasionally, for 12 minutes.
-Remove cauliflower with a mesh spider, or 2 slotted spoons and drain over pot.
-Transfer to a rimmed baking sheet/roasting pan/cast-iron skillet
-Roast for 25 minutes or until golden
-You can save the poaching liquid. To poach fish, flavor a pasta sauce, or make this recipe again tomorrow;)
Whipped Goat Cheese:
- 4oz. goat cheese
- 3oz. cream cheese
- 3oz. feta
- 1/3 cup heavy cream
- 2 Tbsp Olive Oil
- Salt
- Lemon Zest
- Parsley or Dill
-Combine first 5 ingredients in food processor, or mix in a bowl with a hand mixer. Mix until smooth.
-Season with lemon zest, salt, and parsley or dill. Chill.
Serve cauliflower whole or quartered, with the whipped goat cheese on the side.
