  • 2 boneless, skinless chicken breasts
  • 1/2 C panko breadcrumbs
  • 1/3 C parmesan cheese, grated
  • 1/4 C milk
  • 4 Tbsp melted butter
  • 3 Tbsp Italian parsley, chopped
  • 1 Tbsp lemon juice
  • 2 cloves garlic, minced
  • Salt and Pepper to taste
  • Pinch of paprika
Combine the panko breadcrumbs, parmesan, parsley, salt and pepper in a resealable plastic bag.  Dip the chicken breasts in milk and place into the back.  Shake it like you mean it!  Place the coated chicken breasts in a greased baking dish.  Melt the butter in a saucepan and add the lemon juice and garlic.  Spoon over the chicken, sprinkle with the paprika.  Bake at 350 for 25-30 minutes.  Place under the broiler for 5 minutes or until golden on top.
Serve over rice with steamed broccoli.  Serves 2-4.
