*Caramelized Corn with Smoked Paprika

Carmelized corn with Smoked Paprika & Scallions

  • 4 ears of corn, husked and kernels removed
  • 2 scallions (green onion), thinly sliced on a bias
  • 2 Tbsp Olive Oil
  • Smoked Paprika
  • Sea Salt

Heat olive oil over medium flame in a skillet big enough to hold corn kernels in a single layer.

Add kernels and cook until they are golden brown on one side (5 minutes or so).  Do not stir!

Add scallions and toss.  Salt and smoked paprika to taste.  Serve immediately.

Serves 4.
