Sweet and Sticky Chicken

lb. boneless skinless chicken breasts, sliced into strips

tbs of freshly grated ginger
- ·

salt and black pepper

tsp of onion powder
- ·
1/2
tsp of garlic powder
- ·
4
tbs of maple syrup
- ·
3
tbs of balsamic vinegar
- ·
1
tbs of soy sauce
- ·
1
tbs of tomato paste
- ·
1/2
cup of water
- ·
cooking
oil spray
- ·
steamed
rice, sautéed bell peppers (optional)
1. In a bowl, combine the
water, maple syrup, balsamic vinegar, soy sauce and tomato puree. Set aside.
2. Spray a medium pan over a
high heat with some cooking oil spray.
3. Add the chicken, ginger,
onion powder, garlic powder and season well with salt and black pepper.
4. Sauté until lightly golden
on all sides. Remove and set aside.
5. Add the sauce ingredients
to the pan and use a wooden spoon to scrape up any bits stuck to the pan.
6. Bring sauce to a boil and
cook on high heat until it starts to thicken. Add the chicken to the sauce and continue to
simmer until the chicken pieces are well coated and is cooked through.
7. Taste and season with salt
and black pepper as needed.
8. Serve with rice or your
