· 1 head green leaf lettuce, torn into bite-size pieces
· ½ cucumber, peeled and sliced
· 12 cherry tomatoes, quartered
· 3 green onions, white parts, chopped
· ¼ red bell pepper, diced
· 2 TB good balsamic vinegar
· 1 tsp Dijon mustard
· Pinch of sugar
· Salt and pepper to taste
· ¼ cup good olive oil
Add first five ingredients in bowl. Add balsamic, mustard, sugar, salt & pepper into small bowl. Slowly whisk olive oil. Adjust seasonings. Serves 4.
