Pizza
Stuffed Shells
- · 1 cup of your favorite marinara sauce
- · ½ pound jumbo pasta shells or manicotti, cooked
- · 2 cups ricotta cheese
- · 1 large egg
- · 8 ounces grated Parmesan cheese
- · 4 ounces grated mozzarella cheese
- · 1 teaspoon dried basil
- · 1 teaspoon dried oregano
- · ½ teaspoon salt
- · ½ teaspoon pepper
- · Pinch of crushed red pepper flakes
- · ¼ cup pepperoni, cut into ½-inch
cubes
· Preheat the oven to 350
degrees F. Pour ½ cup of marinara sauce in the bottom of a 9x9 inch baking dish
(or a 9-inch round pie plate).
· Cook the pasta according
to the directions on the package.
· In a large bowl, stir
together the ricotta cheese, egg, all but ¼ cup of the Parmesan, all but ¼ cup
of the mozzarella, the basil, oregano, salt, pepper and pepper flakes.
· Spoon the mixture into
each shell or manicotti. Place the shells or manicotti in the baking dish on
top of the marinara. Add the remaining marinara on top. Top with the remaining Parmesan
and mozzarella cheese. Top with the pepperoni.
· Bake for 30 to 35
minutes, until golden and bubbly. Remove from the oven and top with fresh basil
and more Parmesan if you wish. (Adapted
