Pancake Coin Brochettes with Fresh Berries
- 1 C Pamela's Pancake Mix
- 1 egg
- 3/4 water
- 1 TB canola or grapeseed oil
- 1 pint berries
- 1/4 C powdered sugar
- special equipment: bamboo skewers
In a medium bowl, whisk
together pancake mix, egg, water and oil. Heat a large nonstick skillet or
griddle over medium heat. Ladle 1 tablespoon batter for each pancake and cook
until bubbles cover the top, about 2 minutes. Flip and cook until golden brown,
another minute; repeat. Skewer 3-5 pancake coins on a bamboo skewer and top
with a berry and sprinkle powdered sugar. Makes 4-6 servings.
