One Pot
Cajun Pasta
- 2 TB Olive Oil
- 2 diced chicken breasts
- 3 Andouille sausages, sliced into
1/4-inch slices
- 3 garlic cloves, minced
- 1/2 yellow onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 orange bell pepper, thinly sliced
- 1 package Capricci pasta
- 5 cups chicken broth
- 1/4 cup heavy cream
- 1 cup shredded Parmesan
- 1 TB organic Cajun spice
- 3-4 green onions, diced (optional)
Heat olive oil in pan, medium-high
heat. Add diced chicken and cover with Cajun spice, and stir until chicken
is evenly seasoned. Add sliced sausage and stir. Cook meats for 5-10 minutes or
until the chicken is cooked through.
Add the garlic, onion, peppers and
stir for 3-5 minutes as the veggies cook down.
Add the dry pasta to the pot and pour
in the chicken broth. Stir until everything is combined. Cover pot and bring to
a boil. Once boiling, keep covered and bring heat down to a simmer for 10
minutes, stirring every two minutes and cook until liquid evaporates.
Add heavy cream and Parmesan and still
until well blended. Season with salt and pepper, to taste. Garnish with green
onions (optional).
