Grilled Chicken
Shawarma
Marinade:
- ·
¼ cup unrefined, cold-pressed extra-virgin olive
oil
- ·
Juice of 2 lemons (about ¼ cup)
- ·
2 tsp kosher salt
- ·
2 tsp ground cumin
- ·
2 tsp paprika
- ·
½ tsp ground turmeric
- ·
Pinch of cinnamon
- ·
Pinch of cayenne
- ·
Several grinds of freshly ground black pepper
- ·
4 cloves garlic, minced

2 pounds boneless skinless chicken breasts.
Suggested accompaniments: Baba Food tzatziki sauce, lettuce,
tomato, pickled vegetables, onion, olives, rice.
Combine all marinade ingredients in a non-reactive bowl. Add
chicken and toss to coat. Marinate at room temperature for 1 hour or in the
refrigerator for several hours or up to overnight.
Remove the chicken from the refrigerator 30 minutes before
cooking. Preheat grill to medium heat.
Grill until cooked through, about 7 minutes on each side.
Slice thinly and serve with desired accompaniments. (Adapted
