Golden Chicken with Cilantro-Cashew Pesto

1/2 cup plain Greek Yogurt
- ·
1/4 cup fresh lime juice, divided
- ·
3 1/2 TB extra-virgin olive oil, divided
- ·
1 TB curry powder
- ·
2 tsp brown sugar
- ·
1 1/2 tsp garlic powder
- ·
4 bone-less, skin-less chicken breasts
- ·
2/4 tsp salt, divided
- 3 TB cashews, finely chopped
- ·
1/4 cup fresh cilantro, chopped
- ·
1/2 tsp maple syrup
- ·
1 garlic clove, minced
- ·
1 green onion, finely chopped
Preheat oven
to 425'. Line a cookie sheet with parchment paper.
Combine yogurt,
3 TB lime juice, 1 TB oil, curry powder, sugar, and garlic powder in a large
bowl, stirring with a whisk. Add chicken to yogurt mixture; toss well to coat.
Let stand 30 minutes. Place chicken on parchment-lined sheet. Sprinkle with 1/4
tsp salt.
Place
chicken in oven and bake for 35 minutes or until done.
While
chicken is cooking, combine 1 TB lime juice, remaining 2 1/2 TBS oil, 1/4 tsp
salt, cilantro, cashews, syrup, garlic, and onion in a small bowl; stir to
combine. Set aside.
To serve,
place chicken over Coconut Rice (recipe under "Sides") and top evenly
with cilantro mixture. Serves 4.
