Coconut Rice

1 cup chicken stock
- ·
2 garlic cloves, minced
- ·
3/4 cup basmati rice
- ·
3/4 cup coconut milk
- ·
2 tsp lime juice
- ·
1/4 tsp salt
In a medium
saucepan, combine stock, garlic, rice and milk over medium-high heat; bring to
a boil. Stir; cover, reduce heat, and simmer for 40 minutes. Remove from heat;
let stand 10 minutes. Remove lid; stir in lime juice and salt.
