  • 2 C wild rice blend
  • 2 Tbsp butter
  • 6 cloves garlic
  • 2 C fresh asparagus, cut to 1 in. lenghts
  • 1 C thinly sliced sun-dried tomatoes
  • 1 C chopped fresh basil
  • 3 oz. feta cheese, crumbled (optional)
  • 4 grilled chicken and apple sausages, sliced in to 1/2 in. pieces
  • salt and pepper

Cook wild rice blend according to package directions and set aside.

Heat a large skillet over medium-high heat.  Melt the butter adn add the garlic.  Stir for 2 minutes and add the asparagus.  Saute until bright green and slightly tender.  Add the cooked rice, tomatoes and basil.  Saute until rice is warmed through.  Salt and pepper to taste.  Add sausages and feta.  Toss to combine. 

Serves 4.
