Triple Plum Salsa
Serve this colorful salsa with grilled chicken, fish, or pork.
  • 1/4 cup finely chopped red onion
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon minced seeded jalapeño pepper
  • 1 teaspoon grated lime rind
  • 1 tablespoon fresh lime juice
  • 2 teaspoons minced peeled fresh ginger
  • 2 teaspoons vegetable oil
  • 2 ripe red-skinned plums, pitted and diced
  • 2 ripe green-skinned plums, pitted and diced
  • 2 ripe purple or black-skinned plums, pitted and diced
Combine all ingredients in a bowl; toss well. Let stand 30 minutes. Makes 4 cups (Cooking Light 7/98)
