Slow Cooker Pork Tacos

  • 3 Tb organic Cajun spice
  • 3 TB white vinegar
  • 3 TB fresh orange juice
  • 1 TB fresh lime juice
  • 3 large garlic cloves, peeled
  • 1 TB salt, plus more to taste
  • 1 pork tenderloin (2 pieces, about 2 1/2 lbs total), trimmed

1. In a blender, puree the spice with the vinegar, citrus juices, garlic, salt and 1/2 cup of water until very smooth.
2. Place pork tenderloins in slow cooker. Rub the blended mixture onto the pork to coat it well.
3. Add cover. Turn slow cooker to 4 hours. Cook until tender and the meat pulls apart easily with tongs.
4. If there's a lot of liquid left in the pot after 4 hours, remove the lid and continue to cook until some of it has evaporated. 
5. Season the pork with salt to taste. 

Serves 6-8

Optional taco fixings: Corn or flour tortillas, shredded cheese, sliced avocado, diced onions,  Heidi's salsa, sour cream, sauteed bell peppers.
