2 Cups boiled or roasted Chicken Breast
2 Celery ribs, diced
3 Green Onion, chopped
12 Boston Lettuce Leaves
3/4 Cup Greek or Plain Yogurt
1/2 Cup Diced Jicama
1/2 Cup Raisins
1/2 Cup Chopped Cashews (roasted and salted)
1/3 Cup Veganaise
1/4 Cup Honey
2 tsp whole grain mustard
2 tsp curry powder
1 Tbsp chopped cilantro
1 Tbsp fresh lime juice
Salt, Pepper, and Lime Zest to taste.
(Assumes the Chicken has been prepared, chilled and diced. A
perfect way to spice up leftover chicken, too!)
1. In a large bowl, combine yogurt, veganaise, honey, mustard, lime
juice, curry powder, salt, lime zest and cilantro.
Whisk thoroughly to combine.
2. Add chicken, celery, cashews, raisins, jicama and green
onions. Mix thoroughly.
3. Serve over lettuce leaves. Garnish with extra chopped
cilantro or some diced tomato.
