*Baked Pesto Chicken
Baked Pesto Chicken

  • 2 boneless, skinless chicken breasts, butterflied and cut in half cross-wise
  • 1  6-oz container basil pesto
  • 1/2 cup shredded mozzarella cheese

Preheat oven to 375'. Spray a 9 x 13 baking dish with non-stick spray.
Spread half of the basil pesto over the bottom of the baking dish. Place the chicken in the baking dish in one layer. Spread the remaining pesto over the top of the chicken. Cover the dish with aluminum foil and bake the chicken for 25 minutes, or until the chicken is cooked through.
Remove the foil and sprinkle cheese on top of the chicken. Put dish back in oven, uncovered, and cook 5 minutes more until the cheese is melted.

Serves 4.      Serve over pasta, if desired.
