Turkey Fried "Rice"

  • 8 oz. ground turkey
  • 2 TB olive oil, divided
  • 1/2 head cauliflower, grated in food processor until it resembles rice
  • 1 tsp kosher salt
  • 6 cups fresh vegetables, cut into bite-size pieces, such as broccoli, snow peas, bell peppers, onions, etc
  • 1 TB grated fresh ginger
  • 1 TB finely chopped garlic
  • 2 large eggs,  lightly beaten
  • 1 TB plus 2 tsp tamari soy sauce
  • 2 TB fresh cilantro, chopped


Add turkey to skillet and cook over medium-high heat, breaking up in the pan until cooked through. Transfer to a large bowl and reserve.

Increase the heat to high add 1 TB olive oil. Add cauliflower and cook until slightly softened but still crunchy, about 5 minutes. Transfer to the bowl with the turkey and toss with salt.

Add the remaining TB olive oil to same pan. Add vegetables, ginger, and garlic and cook until charred and softened, about 5 minutes. Push vegetables to one side of pan and add the eggs. Scrample to break up. Add the turkey and cauliflower to the egg and stir until egg is cooked through.

Add soy sauce and mix evenly. Serve with chopped cilantro.  Serves 4.
