Mustard-Glazed Salmon

  • 4  (6- to 8-ounce) salmon fillets
  • 1/4 cup whole grain mustard
  • 1/4 cup firmly packed light brown sugar
  • 1/2 tsp. orange zest
  • 1 TB fresh orange juice
  • 1/4 tsp. black pepper
  • 1/8 tsp. salt
  • 4 thinly sliced orange slices, halved
  • Garnish: chopped chives

Combine mustard and next 5 ingredients in a small bowl, and brush half of mustard mixture over salmon, skin side down, reserving remaining mustard mixture.
Marinate at room temperature for up to 30 minutes or in the refrigerator for up to 2 hours.
Position oven rack on the second level. Preheat broiler. Line a baking sheet with parchment or foil. Transfer salmon skin side down onto baking sheet. Place 2 orange slices on top of each piece.  
Broil salmon until opaque in the center, but not completely cooked through, about 8 minutes.  Drizzle mustard mixture and add chives, if desired.      

Serves 4.
