Crowd Pleasing Casserole

  • ·         1 pound ground beef or ground turkey
  • ·         1 medium onion, diced
  • ·         1 15 ounce can tomato sauce
  • ·         1 tsp sugar
  • ·         1/2 tsp salt
  • ·         1/2 tsp pepper
  • ·         1 pound cooked pasta (not spaghetti or fettuccine)
  • ·         1 cup cottage cheese
  • ·         1 brick cream cheese
  • ·         1/4 cup red bell pepper, chopped
  • ·         1/2 cup shredded  Parmesan cheese


Heat oven to 350'. In a skillet, cook the meat and onion until meat is cooked. Stir in tomato sauce, sugar, salt and pepper. Remove from heat. Bring a large pot of water to a boil. Cook pasta until al dente. Drain and set aside.

In a large bowl, combine cottage cheese, cream cheese and bell pepper. Stir to combine. Stir in cooked pasta. In a 9" x 13" baking dish, spread half the pasta mixture down. Cover with 1/2 the meat sauce. Add the rest of the pasta mixture, then the rest of the meat sauce. Sprinkle with Parmesan. Bake uncovered for 30 minutes.
