Chopped Thai Salad with Creamy Cilantro Dressing


For the salad:

·          1 head Romaine lettuce, finely chopped

·          6-8 pieces Dino Kale, finely chopped

·          1 cup purple cabbage, shredded

·          1 cup carrots, shredded

·          1 cup shelled edamame, defrosted

·          1/2 cup peanuts

·          3 green onions, thinly sliced

·          1/4 cup cilantro, chopped


For the dressing:

·          1/2 cup  sour cream

·          1/2 cup  mayonnaise

·          1/3 cup skim milk

·          3 tablespoons lime juice

·          1/4 cup  chopped fresh cilantro

·          2 large garlic cloves, minced


For the salad: In a large bowl, combine romaine, kale, cabbage, carrots, edamame, peanuts, green onions, and cilantro.


For the dressing: Combine all ingredients, and stir well with a whisk. Cover sauce, and chill.


When ready to serve, drizzle dressing over salad and toss until well combined.
