Cajun Chicken Pasta

16 oz. spaghetti
- ·
2 boneless, skinless chicken breasts, sliced
into thin strips
- ·
2 TB Cajun seasoning
- ·
2 TB butter
- ·
1 orange bell pepper, chopped
- ·
1 red bell pepper, chopped
- ·
3 green onions, minced
- ·
1 1/2 cups half and half
- ·
1/2 tsp dried basil
- ·
1 tsp lemon pepper
- ·
1 tsp salt
- ·
1 tsp garlic powder
- ·
1 tsp ground black pepper
- ·
1/3 cup grated Parmesan cheese
Bring a
large pot of lightly salted water to a boil. Add spaghetti and cook for 8 to 10
minutes, or until al dente; drain.
Meanwhile,
place chicken and Cajun seasoning in a bowl, toss to coat.
In a large
skillet over medium heat, saute chicken in butter until no longer pink and
juices run clear, about 5 to 7 minutes. Add bell peppers and green onions; cook
for 2 to 3 minutes. Reduce heat and stir in half and half. Season the sauce
with the basil, lemon pepper, salt, garlic powder and pepper, and heat through.
In a large bowl, toss spaghetti with sauce. Sprinkle
with grated Parmesan cheese. Serves 4
