Aunt Alice's Potatoes

  • ·         2 pounds Yukon potatoes
  • ·         1/4 cup, plus 2 Tablespoons butter, divided
  • ·         3 cups shredded cheddar cheese
  •       2 cups sour cream
  • ·         1/2 cup chopped green onions
  • ·         1 tsp. salt
  • ·         1/4 tsp pepper 

Cook potatoes in their skins until tender when poked with a fork.  Cool and peel potatoes.  Shred potatoes in a Cuisinart. In a medium saucepan, combine 1/4 cup butter and the cheese, stirring until almost melted. Remove from heat. Blend in sour cream, onions, salt and pepper. 

Lightly grease a 9 x 11 baking dish; place shredded potatoes in dish and pour butter mixture over potatoes and stir lightly until blended. Dot with remaining 2 T butter.

Bake at 350' for about 45 minutes until golden brown on top.  Serves.... NOT ENOUGH!
