* Adam's Parmesan Chicken
Adam's Parmesan Chicken
- 4 boneless, skinless chicken breasts,
pounded to about 1/2-inch thickness
- 1 TB olive oil
- 1 tsp Dijon mustard
- 2 cups breadcrumbs
- 3 TB shredded Parmesan
- salt and pepper to taste
- 1 TB Italian Seasoning
Heat grill to medium/medium-high. Combine olive oil
and mustard in a dish. Combine remaining 5 ingredients in a
separate dish. Dredge each breast of chicken into oil mixture, then
dredge into breadcrumb mixture.
Grill 3-4 minutes per side, depending on breast width.
Lower heat if breadcrumbs start to burn. Delicious served with
grilled vegetables. Serves 4.
